How to Make Delicious Kimchi Stew Without Seasoning or Salt
Ingredients
- 1 cup well-fermented kimchi (aged kimchi works best)
- 1/4 cup kimchi juice
- 1/2 pound pork belly or shoulder, sliced thinly
- 1 block tofu, cubed
- 2 green onions, chopped
- 1 tablespoon minced garlic
- 1 tablespoon cooking oil
- 3 cups water
- Optional: mushrooms, onions, or other vegetables of your choice
## Instructions
1. Heat oil in a pot over medium heat. Add the pork and sauté until slightly browned.
2. Add the kimchi and garlic, stir-frying for about 2-3 minutes until fragrant.
3. Pour in the water and kimchi juice. The natural fermentation of the kimchi will provide enough flavor without additional salt or seasoning.
4. Bring to a boil, then reduce heat and simmer for about 15-20 minutes to allow the flavors to develop.
5. Add the tofu and any additional vegetables, then simmer for another 5 minutes.
6. Sprinkle chopped green onions on top before serving.
7. Serve hot with a bowl of rice.
## Tips
- Using well-aged kimchi is key as it contains more natural flavor and acidity
- The kimchi juice adds significant depth of flavor, so don't skip it
- The fat from the pork enhances the overall taste without needing additional seasoning
- If you find it needs more flavor, add more kimchi juice rather than salt
